Ikejime and Chi-nuki, does that speak to you?
These techniques of Japanese cuisine are practiced by our Chef, himself a native of Japan.

To preserve the quality of the fish flesh, the Japanese chef favors Ikejime, a slaughtering technique that instantly kills the fish and enhances its flesh.

Our drink menu offers a wide selection of sakes, whiskeys in the best Irish, American, French and Japanese bottles as well as other references such as Hibiki Suntory, Nikka From the Barrel, Hakushu or Yamazaki.
