Do you know about Ikejime and Chi-nuki?
These Japanese cooking techniques are practiced by our Chef, himself originally from Japan.

To preserve the quality of the fish flesh, the Japanese chef favors Ikejime, a slaughtering technique that instantly kills the fish and sublimates its flesh.
