Ceviche of salmon and sea bream with daikon flower on a base of soy jelly and mirin
Tataki of aburi red tuna, topped with yuzu and soy sauce, served with sprouts and crunchy smoked pea purée, with sweet shirodashi pepper and scraped bottarga.
Foie Gras with a glass of white wine
Sea bass temaki matured for two weeks with a base of koshi hikari rice on a shiso leaf served with an egg yolk sauce and Ikura purée
White chocolate mousse with mango brunoise and exotic coulis with a quenelle of mango passion ice cream, purple shiso leaf, pistachio powder and wheat tuile.

Every evening at dinner and lunch on Saturday and Sunday, the Parisian fusion restaurant TO applies the tradition of "Omakase" - "I leave it up to you" in Japanese - by letting the chef choose the menu for his customers.

Our chef and his brigade are at work in the open kitchen opposite the private lounge on the lower floor.
